Baking: Gluten Free Apple Dumpling Cake

3 pounds Apples (peeled, cored, sliced)
2 cups Gluten free all purpose flour
1 1/2 cups White sugar
2 teaspoons Baking powder
1 teaspoon Salt
2 Eggs (beaten)
1/2 cup Olive oil
1/2 cup Applesauce (I use plain, no sugar added)
2 teaspoons Ground cinnamon

Preheat oven to 350 degrees. Lightly grease 9x13 baking dish. Place apples in dish, spread evenly. In a bowl, mix flour, sugar, baking powder, and salt. Stir in eggs, oil, applesauce, and 1 teaspoon of cinnamon. Scoop mix onto apples until apples are covered evenly. Sprinkle 1 teaspoon of cinnamon over the top. Bake for 40-45 minutes or until top is puffy and golden brown. Remove from oven and let cool. Apple will have bubbled through here and there making the top kind of look like a bunch of broken hills.
