Baking: Gluten Free Banana Bread

2 cups All purpose gluten free flour
1 teaspoon Baking Soda
1/4 teaspoon Salt
1/2 cup Butter, softened
1 cup Brown sugar
2 Eggs
5 medium, ripe Bananas (I use yellow bananas, if you let them brown and shrink for more banana flavor, use 6 bananas)

Preheat oven to 350 degrees.
In a large bowl, add your butter, brown sugar, eggs, and bananas. Mash all of this together well (there will be bits of bananas left in the batter so far). I use a metal potato masher to mash all of it together. Add your baking soda and salt. Mix. Add your GF flour and stir well. If you are using glass bread pans, they are more shallow than some metal pans. This can make 2 bread loafs with glass loaf pans and 1 loaf for metal. For your first time using this recipe, put a small cookie sheet under your loaf pan just in case of overflow. Loafs in the glass pans are usually a but shorter, but still taste as great. Bake for 50 to 60 minutes or until a butter knife poked into its center comes out clean. Let cool ten minutes before flipping it out of loaf pan. If you use metal pans you may find it easier if you grease the pan beforehand.
