Baking: Gluten Free Cornbread

1 cup Cornmeal
1 1/2 cups Gluten free all purpose flour
1/4 cup Sugar
2 teaspoons Baking powder
1/2 teaspoon Salt
1 cup Milk
1/4 cup Olive oil
2 Eggs

Preheat oven to 400 degrees. Grease either an 8 or 9 inch pan or a large skillet.
Mix dry ingredients, add wet ingredients and mix well. Pour into greased pan and bake for about 20 minutes or until butter knife stabbed into it comes out clean. Remove from oven and let it cool. I find my cornbread has a better taste when its baked in a cast iron skillet.
