Baking: Gluten Free Oatmeal Cookies

1 cup Butter, softened
2 Eggs
1 cup Sugar
1 teaspoon Vanilla
1 teaspoon Baking soda
1 teaspoon Ground cinnamon
2 cups Gluten free all-purpose flour
3 cups Quick oats

Cream together butter, eggs, sugar, and vanilla. Add in baking soda and cinnamon. Mix in flour and oats. My husband chills it for an hour before baking, but I don't so that is optional depending on how goopy your butter gets in the mix. Slightly squish small balls onto a cookie sheet. About 1 1/2 inches in diameter. Bake 8-10 minutes or until bottom edges are browning and the top of the cookie isn't shiny anymore. Bake at 350 degrees.
